Ingredients

  • – 1 ½ cups graham cracker crumbs

  • – 1 ½ cups fresh strawberries, diced
  • – 1 cup heavy cream

Instructions

  • 1. In a bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix well.
  • 2. Press the crumb mixture firmly into the bottom of each mason jar, creating a crust layer. Set aside.
  • 3. Using a mixer, beat cream cheese until smooth. Add powdered sugar and vanilla extract. Mix until well combined and smooth.
  • 4. Gently fold in diced strawberries into the cream cheese mixture.
  • 5. In a separate bowl, whip the heavy cream until stiff peaks form. Carefully fold the whipped cream into the strawberry and cream cheese mixture.
  • 6. Spoon or pipe the cheesecake mixture into the prepared mason jars over the crust layer.
  • 7. Cover and refrigerate the cheesecakes for at least 2-3 hours or until set.
